Pistachios have surged by nearly 50% this year, and 500g can now buy two chickens. Sam’s limits each person to one 1.13kg bag per month for roasted pistachios.

Rising Prices and Tight Supply

Chefs and confectioners are feeling the impact of the price surge. A pistachio and cashew seller in Zhejiang, Hangzhou, who has been in the business for 30 years, stated that they have never seen such high prices for pistachios, with the wholesale price increasing by nearly 30 yuan, for a cumulative increase of nearly 50% in price.

Industry Impact

Chefs and dessert shops are having to switch to other nuts or reduce supplies due to the price hike. An Hangzhou chef commented, “The price of one kilogram of pistachios could buy two chickens now,” and the menus for home feasts are switching to other nuts like almond and cashew.

A dessert bar owner in Nanjing, Jiangsu, revealed that the price of purchased pistachios increased from 69.9 yuan per catty in August to 109.9 yuan, forcing them to reduce the supply of pistachio-flavored desserts.
